The strongest weapon for new players is imo the Odachi. It hits super hard, it relies less on skills / timing than other weapons (but still has good ones so you learn) it has the best range in the game, and its mid stance attacks aren't deflected by guarding and do good guarbreak (which most other weapons can only do in the much harder to use high stance).

Recommend to try out this combo. Probably Kusa and Glaive for the +1 to Dex and Magic. Tonfa + spear, although I plan to mostly use tonfa and will probably switch to just tonfa at some point during the game.
