I now currently have a Glock 30s and it is a bit thicker but with it's standard 10 round mag it's about the same grip length as my Shield and I get 3 more rounds.
I have the G22Gen4, and the G23C. The G23C is a bit larger than the Defender, and being compensated, I dought that it is a valid comparison. Conceal ability is an issue since I'm not a large guy. It has slightly more felt recoil than the 30 due to lighter slide and thinner grip. I never noticed musch difference with the 36 slide on my 30 (same as 30s). The G30 gen3, G30SF gen3 & G30S have the same factory grip texture. The gen4 G30SF has a different grip texture. The Gen3 G30, gen3 30SF & Gen4 G30SF have the same slide. The G30S has the skinniest slide out of all of them. All are great shooters with pinpoint accuracy (dependent on the shooter). It feels better than the XDM, it doesn't feel like a Coke Can (Glock 30s grip) and it doesn't have that ridiculous looking base pad on the magazine that the Glock 30 mags use.
