For those that might have the same or similar problems, try going to your appdata\local\Larian Studios\Baldur's Gate 3\LevelCache folder and deleting everything inside it. Everything loads very quickly now on my end. Hope it might help someone else!

Rebooted my computer twice. I still can't get the game to actually start. Go into steam settings > In game, and disable the steam overlay box. fixed the issue for me.
